Description

The Yacon root grows in the Andes at an altitude of about 2,800 m and has mostly a white to yellowish-transparent flesh. Yacon roots are eaten raw for their pleasant and sweet taste. The local population uses the roots as refreshment during field work. The water content of a fresh yacon root varies between 85% and 90%, but the special feature of the root is the storage of carbohydrates. Because these are not stored as starch, but to a large extent as FOS, as well as other types of sugar. The high proportion of FOS prevents an influence on blood sugar levels and promotes a healthy intestinal flora. PH Yacon root powder has a low glycemic index and has a prebiotic effect due to its FOS content.
